Storm Warning!!
Douglas County Nebraska has a severe thunderstorm coming our way! They are telling people to STAY AT WORK until the storm passes! That is how serious this storm is! 80+mph wind gusts and over golf ball size hail.
The tornado sirens are going off…

Mexican Movies.
The biggest arguement in our household is based off of Jose’s jealousy of my computer. He thinks I spend entirely too much time on the internet. Hah, if he knew how much I actually am on the computer, he’d have a heart attack.
He always wants me to watch TV with him, but our television interests are nothing alike. Give Jose a novela, any novela, and he is hooked. No novelas? How about an action movie? It doesn’t matter if he’s watched it a trillion times. No good American movies? We have quite a few Spanish movie channels with Pedro Infante and Vicente Ferndandez movies on almost 24/7. And, the Chapulin Colorado or El Chavo Del 8 is almost always on!
I like The Office, Roseanne, Full House, and the Harry Potter movies. And movies like Suer Bad and Knocked Up that we can’t watch while the girls are still awake. Any of the above (with the exception of the action movie the FIRST time!) I probably won’t watch. So… as you see, we don’t have much in common.
But, a couple Saturday nights ago, Jose was watching said Spanish movie channels. My computer is right next to the TV, so I was catching glimpses of the movies, and oh my freaking God, it was the funniest movie I have ever seen. Jose was giggling like someone was tickling him.
My friends, I was introduced Los Verduleros!
I can’t believe most of my Mexican amigas have no idea what I’m talking about. These movies are so funny (I think there are three in the series?) I don’t understand how they have never heard of them. Jose had the darned movie almost memorized!! So… I’m asking you all, does anyone know what I’m talking about? Or do your husbands?
Yes, the humor is quite vulgar (LoL, I was introduced to the phrase “Que poca madre!”) and there IS nudity…
But they are hilarious. That night, the computer was shut off (GASP!) and I parked myself in front of the TV to watch the rest of the movie.
“Pinche arbolito de navidad!”
“Porque le dices arbolito de navidad?!”
“Porque las bolas no mas los tiene de adorno!”
Sorry, sorry. I hope I haven’t offended anyone!!!

I want my darned chicken…
Usually, we are not out and about in this household until after 10am, usually closer to noon. So, since todays plans involved me and the girls dressed and out of the house before 6:30am, it has been an off day. A very off day. I am so tired and lazy and don’t want to do a damned thing. And I have hiccups, which sucks.
We had to take my suegra down to the Medical Center to get a C/T scan done. She’s been having some serious stomach discomfort, so on Wednesday her doctor ordered the scan for her. She had the appointment at 8:15am, but had to be there 45 minutes early so that she could drink some pink stuff and fill out paperwork. The girls quickly got distracted, so we took a self guided tour of the hospital. And damn, I wish I would have had my camera!
Right outside the C/T scan and MRI area, there was a set of doors leading to a super beautiful garden/memorial thing. The sprinklers were on, so I let the girls kick their shoes off and get their feet wet. They had a blast doing that! Then we headed upstairs (my ever-hungry self was in search of a cafeteria) and ended up on the NICU floor. As we turned around to go back, I noticed a sign that said “Rooftop Garden”. Hmmm…
Another set of doors let us out onto the roof, and an even more beautiful garden complete with ponds and fountains awaited us! The girls were very impressed! LOL, Livie wanted to go swimming in the pond!
We found some more interesting things… A huge pavillion with sofas, flat screen TVs, WIFI, and a coffee bar for visitors/patients/family to relax. We DID find the cafeteria, but I didn’t have any cash (duh!). We visited the chapel, too.
All in all, I was very impressed. It was my first visit to the Clarkson side of the Medical Center. Over on the University side, I became really familiar with things after having two kids there and Olivia’s 19 day NICU stay.
LoL, anyways, (I got very sidetracked!) after we took my suegra back home, I decided to go to Hy-Vee for some lunch! I wanted a rotisserie chicken so darned bad! But… (sad sigh) I guess they aren’t ready at 9am. Damn.
If I would have planned a little better, I could have went to Jacobos in South Omaha and got one! They are always ready there, and very good. I could have picked up some rice or tamales, too.
Darn. Now I’m disappointed all over again!!

If I won the lottery…
While reading some of my friends’ blogs, I stumbled across North Of The Border – Rangel2299’s blog about what she would do if she won the lottery. Here’s what I’d do!
First and most important: I would pay off everything we owe! Hospital bills, credit cards, car loans, etc.
Next, I would buy us a nice, large home here in Omaha in a nice neighborhood. Many bedrooms, an huge indoor pool, and super nice bathrooms.
Then, I’d fly down to Lagos de Moreno, and buy a nice house down there. A pool would be nice, seeing how I could afford someone to take care of it.
All of the in-laws down in Lagos would get enough money to fix their houses and buy a vehicle.
I would pay off my parents’ debt.
I would donate a large chunk to charity.
Hmmm… what else? What else… LOL, I would definately give my suegra some $$$. And get myself a maid!

Swimming Addiction!
We (me and the girls; Jose does not participate!) have been swimming so much lately! At least an hour or two every day. Isabel loves it! She would easily swim all day long if we’d let her.
Olivia enjoys it, too. But not near as much as Isabel. After 45 minutes or so, she grabs her towel and lays down to watch. I think she gets cold…
Last night, Diana and her sisters came over in the evening, so we swam even more! It was the first time we were still in the pool when they come around to turn the lights on.
Jose, of course, was having a cow because it was passed dark and we were still swimming, but oh well. I don’t know what he thinks is going to happen. Maybe a big pool monster will surface and eat us all?! We had a blast.
Sunday night, I pulled a young girl (maybe 5?) out of the deep end of the pool. Her parents had JUST asked me where I bought the girls’ life jackets at. They started chatting, and I hear, “Honey – Maddie!” and sure enough, the little girl was struggling in the deep end. Her hands were the only part of her above water! They thanked me a bazillion times. I was all shaky and tearful afterwards! It was scary.
So… even though I know people frown upon getting kids dependant upon flotation devices, and it gives children a false sense of security and all that jazz, I’m not letting the girls get in the pool without a life jacket on until both of them are confident swimmers! Its too scary. This girls’ parents were IN the pool at the time! It happened in a matter of seconds.
Anyways…
We were driving around the other afternoon, and I found a really cool pool not too far from here! I can’t wait to take the girls. Today is sooo not the day for it, though. It’s 67 degrees and raining like crazy! Maybe tomorrow??

Work. :(
Ugh… Jose thinks I should get a job. I half-heartedly agree with him, but with my crappy job history its a little tough to find a decent job. I *could* go bust my butt at Tyson or somewhere similar, but we are not that desperate.
Yet.
A part time evening job would be ideal. I wouldn’t really mind if it was a fast food kind of thing… Waitressing is 100% out of the question. Dennys burned me out big time as far as waitressing is concerned.
I’ve heard Starbucks is a decent place to work! I might have to look into that…
(sigh) I’m really enjoying this whole stay at home mom thing. I wish it could continue!

Enchiladas :)
The enchiladas I made Thursday were very, very delicious. Here’s how I made ‘em, followed with some pictures.
I used:
1/4 head of lettuce (shredded)
6 Chiles Anchos
1 small piece of garlic
1 lb. of queso fresco
6 potatoes
3 carrots
1 small package of corn tortillas
Oil
To start, I boiled the chiles in a small pan and got the potatoes and carrots boiling in another. Once the chiles came to a boil, I shut the heat off and let it cool for a while. Once cooled, the chiles got blended with the piece of garlic. Make sure it is well blended. This was my enchilada sauce.
Once the potatoes and carrots are tender, I peeled the potatoes and cut them carrots up into small pieces. Got some oil heated up in a frying pan, and fried the potatoes/carrtots for a 5-10 minutes.
In another skillet, I heated up about an inch of oil. Not too high, or the tortillas will crisp up and get burnt. I dunked the tortillas one at a time in the hot oil and then into the enchilada sauce. Put some queso fresco and roll up! You got an echilada! Top with potatoes/carrots and shredded lettuce, and some crema mexicana, and you’re good to go!

Olivia’s Birthday Party
Olivia had a beautiful party on Saturday, and all the guests seemed to have tons of fun!! My biggest disappointment was that Olivia’s padrinos blew us off, but whatever. And then on Sunday, her Madrina had the balls to call and complain about the invitation she received. Really?? You didn’t even GO to the party, yet you’re going to complain about the invitations! WTF?
It did rain a tad around 6:30. There weren’t many guests there yet, and I panicked, thinking no one was going to come because of the rain! It was done and over with by 7pm, though, and that’s when just about everyone showed up! The hamburgers and hotdogs were a success, even if Jose’s brothers call him “McDonalds” now!

Before the pictures, a word about the photo invites. Jose LOVED them, but made me promise to only give them to immediate family. Dijo que alguien le podria hacer brujeria a su nina con la foto. Whatever…
WTH?! I just realized the little button I use to add pictures is all gone. I’m going to try adding a slide show then. Let’s see how this works.
Well, now I’m waiting for more pictures to upload, so I’ll keep talking about the party!
In true Mexican fashion, there was easily more beer than any other beverage at the party. Almost all of the single, male guests brought a case of beer as their “gift” to the birthday girl.
Rigo and Lupe left fighting. I don’t know about what, but she was crying. My suegra left in a huge hurry, not even saying good bye. She about had a frickin’ cow looking for someone to take her home, because no one wanted to leave. Omar and Ana ended up leaving for a few minutes to give her a ride.
The party broke up around 10pm, and by around 11pm the only people left was us, my padrinos, and my friend and her boyfriend (they are Olivia’s padrino’s of her presentation). Jose was a little tipsy, so I drove us home.
Let’s see if this works.

Thursday Excitement!!
Today, I am making enchiladas for dinner. I’m making the way my suegra makes them, filled with queso fresco and topped with lettuce and fried potatoes and carrots. A little crema usually, but I forgot to buy some. Darn!
If you’re unfamiliar with it, the combo does sound a little weird. But it is so darned good. Just thinking about it makes my mouth water! The potatoes/carrots are cooking right now, and I have the enchilada sauce ready and waiting. Yummy!
I tried to find a picture of the finished product on Google, but none availabe. I’ll have to grab some pics once they are ready.
Anyways… today is Thursday, which means its also Ladies’ Night at the Guacamaya! I haven’t been in quite some time, and tonight my comadre Patricia is celebrating her birthday. I asked Jose if he cared. He asked the usual, “Quien y quien va a ir?” I don’t know what he expects me to say! Once I told him who all was going, he said it was fine. YAY!
Mmm… Liquid Cocaine!
I handed out some more invites for Livie’s party. Lupita ordered her cake today, too. Another very, very nice gesture on her part. She ordered the cake from The Cake Gallery and it was $62! Daaaammn. She ordered strawberry cake with neopolitan ice cream. Sounds pretty good! And, her picture (actually, her photo invite!) is going to be printed on the cake! Cool.
